New Year’s Minestrone Soup

 

1 can (14 ½ oz) beef broth
2 cups water
1 package (1 oz) dry vegetable soup mix
1 cup edamame
1 cup frozen corn
1 can (8 oz) tomato sauce
2 cups cubed cooked beef, turkey or ham
1 cup cooked vegetables
1 cup sliced celery
1 cup chopped onion
1 teaspoon Italian seasoning
½ teaspoon salt
¼ teaspoon pepper
2 cups cooked small shell pasta

In a large saucepan, heat beef broth, water and vegetable soup mix until boiling. Add edamame, corn, tomato sauce, meat, vegetables and seasoning; simmer for 30 minutes. Add pasta and simmer for 15 minute or until heated thoroughly. Serves 6.
