Molasses Spice Cake
- 2 1/2 cups all-purpose flour
- 2 teaspoons pumpkin pie spice
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup margarine, softened
- 3/4 cup brown sugar
- 1 egg
- 3/4 cup mild molasses
- 2/3 cup vanilla soy milk
Directions:
- In a mixing bowl combine all-purpose flour, pumpkin pie spice, baking powder, baking soda and salt
- In a second bowl, cream the margarine and brown sugar; add in the egg and molasses, continue to mix
- Alternately add flour mixture to creamed mixture with vanilla soy milk
- Pour batter into greased Bundt pan
- Bake at 350 degrees for 55 to 60 minutes until wooden pick comes out clean
- Serve with whipped cream or sprinkle with powdered sugar
