Minestrone
2 slices bacon, chopped
2 cloves garlic, minced
1 medium onion, chopped
2 carrots, grated
2 celery stalks, chopped
¼ small head cabbage, chopped
1 cup edamame
2 teaspoons Italian seasoning
1 can (14.5 oz.) diced tomatoes
1 can (15 oz.) yellow soybeans, rinsed and drained
10 cups chicken broth
¾ cup orzo
Parmesan cheese
Place bacon, garlic and
onion in large soup pot and saute about 2 minutes or until bacon is
partially cooked. Add carrots, celery, cabbage and edamame; cook until
the vegetables are tender about 10 minutes. Add Italian seasoning,
tomatoes, soybeans and chicken broth; reduce heat and simmer for 30
minutes. Add orzo and cook 15 minutes. Garnish with Parmesan cheese
if desired. Makes about 10 cups soup.
