Loaded Cheesy Muffins

Ingredients:

  • 1½ cups all-purpose flour
  • 2 Tablespoons sugar
  • 3 teaspoons baking powder
  • ¼ cup chopped red bell pepper
  • ¼ cup chopped green onion
  • 4 strips bacon, cooked and crumbled, reserve drippings
  • 1 Tablespoon bacon drippings
  • ⅓ cup vegetable oil
  • 1 egg
  • ½ cup plain soy milk
  • 2 ounces pasteurized, processed cheese

Directions:

  1. In a large bowl, combine flour, sugar and baking powder
  2. Add bacon, red bell pepper and green onion stir
  3. In a medium bowl, combine bacon drippings, vegetable oil, egg and soy milk
  4. Add liquid mixture to flour mixture and stir until just combined
  5. Spoon batter into greased muffin pan or lined with paper baking cups
  6. Cut cheese into twelve 1/2 inch cubes
  7. Press a cheese cube down in the center of each muffin batter
  8. Bake at 400 degrees for 15 to 18 minutes or until wooden pick inserted in center comes out clean

Makes 12 muffins
