Lemon Cheesecake

  • 1 cup graham cracker crumbs
  • ½ cup plus 2 Tablespoons sugar, divided
  • ¼ cup margarine, melted
  • 2 packages (8 ounces each) soy cream cheese
  • 2 eggs
  • ½ cup soy sour cream
  • 1 teaspoon grated lemon peel
  • ¼ cup lemon juice
  • Strawberry jam, optional
  • Fresh strawberries, optional

Combine graham-cracker crumbs, 2 Tablespoons sugar and margarine in a small bowl. Press mixture into a greased 8-by-8-inch baking dish. Combine soy cream cheese and ½ cup sugar until well blended. Stir in eggs one at a time. Add soy sour cream, grated lemon peel and lemon juice. Stir only until blended. Pour mixture over prepared crust. Bake at 325 F for 35–40 minutes or until center is almost set. If desired, drizzle with strawberry jam and garnish with fresh strawberries or lemon twist.
