Layered Fruit Parfaits
  • 4 ounces soy cream cheese, softened
  • 2 Tablespoons sugar
  • ½ teaspoon vanilla
  • 1 cup fresh sliced peaches (strawberries, blueberries, blackberries, grapes or pineapple)
  • 4 teaspoons chopped honey-roasted soy nuts (optional)

In a medium bowl, combine soy cream cheese, sugar and vanilla; blend well. Layer fruit and creamed mixture in dessert parfait glasses. Before serving, sprinkle with chopped honey-roasted soy nuts.
