  • 1 cup all-purpose flour
  • ½ cup soy flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 medium banana, mashed
  • 1 cup granulated sugar
  • ½ cup shortening
  • 2 eggs
  • 1 teaspoon lemon juice
  • ⅓ cup vanilla soymilk
  • ¼ cups chopped pecans (optional)

Frosting

  • 2 tablespoons margarine, softened
  • 2 cups powdered sugar
  • ¼ teaspoon salt
  • 1 teaspoon vanilla
  • ½ medium very ripe banana
  • ¼ cup pecans

Preheat the oven to 350 F. Coat a 9-by-13-inch baking pan with cooking spray. Mix together the all-purpose flour, soy flour, baking soda and salt. Set aside. Beat the banana, sugar and shortening in a large mixing bowl until smooth. Mix in the eggs, lemon juice and milk. Add the dry ingredients, and mix well. Fold in the pecans, if desired. Transfer the batter to the prepared pan. Bake for 15–20 minutes or until a wooden pick inserted in the center comes out clean. Cool completely before frosting. Prepare the frosting by beating together all the ingredients except the pecans. Spread the frosting over the cooled banana bars, and decorate the top with the pecans if using. Cut into bars to serve. Makes 24 bars
