Double Raisin Oatmeal Cookies
- 1 cup margarine or butter
- 2 cups packed brown sugar
- 2 eggs
- 2 cups soy-flour blend
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 3 cups old-fashioned oats
- 1 cup raisins*
Combine margarine and brown sugar in mixing bowl; blend. Stir in flour, cinnamon, baking soda and salt. Add oats and raisins; mix well. Drop dough by tablespoon onto ungreased baking sheet and bake at 350 F for 10–12 minutes. Let cookies cool on pan then remove from baking sheet and place on wire rack. Makes about 2 dozen cookies
* Condition raisins by placing them in a microwave-safe bowl and adding ½ cup water. Microwave for 1 minute; drain water.
