Double Apple Quick Bread
- 1/2 cup vegetable shortening
- 1 cup granulated sugar
- 2 eggs
- 1/2 tsp. vanilla
- 1/2 cup applesauce
- 2 cups soy flour blend
- 1 tsp. apple pie spice
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 1/2 cups apples, chopped
Directions:
- In a large bowl, mix cream shortening and granulated sugar
- Add in the eggs, vanilla and applesauce; mix well
- Combine the soy flour blend, apple pie spice, baking powder, baking soda and salt in a medium bowl
- Add flour mixture to creamed mixture
- Stir in chopped apple
- Put mixture into greased 9x5x3-inch loaf pan**
- Bake at 350 degrees for 50 to 60 minutes or until wooden pick inserted in center comes out clean; cool 10 minutes then remove from pan
**For an additional topping mix 1 Tbsp. brown sugar, 1 Tbsp. granulated sugar and 1 tsp. apple pie sauce and sprinkle on top of the loaf before baking
