Double Apple Quick Bread

Ingredients:

  • 1/2 cup vegetable shortening
  • 1 cup granulated sugar
  • 2 eggs
  • 1/2 tsp. vanilla
  • 1/2 cup applesauce
  • 2 cups soy flour blend
  • 1 tsp. apple pie spice
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 1/2 cups apples, chopped

Directions:

  1. In a large bowl, mix cream shortening and granulated sugar
  2. Add in the eggs, vanilla and applesauce; mix well
  3. Combine the soy flour blend, apple pie spice, baking powder, baking soda and salt in a medium bowl
  4. Add flour mixture to creamed mixture
  5. Stir in chopped apple
  6. Put mixture into greased 9x5x3-inch loaf pan**
  7. Bake at 350 degrees for 50 to 60 minutes or until wooden pick inserted in center comes out clean; cool 10 minutes then remove from pan

**For an additional topping mix 1 Tbsp. brown sugar, 1 Tbsp. granulated sugar and 1 tsp. apple pie sauce and sprinkle on top of the loaf before baking
