Caramel Whoopie Pie Cookies
  • 1 package (16.5 oz.) caramel cake mix
  • ½ cup silken tofu
  • ¼ cup vegetable oil
  • 1 egg

Filling

  • ¼ cup margarine, softened
  • 4 oz. softened soy cream cheese
  • 1 teaspoon vanilla
  • 2 cups powdered sugar
  1. In large bowl, combine cake mix, tofu, vegetable oil and egg.
  2. Blend until all ingredients are moistened.
  3. Drop batter by tablespoon on greased cookie sheet.
  4. Bake at 350 F for 10–12 minutes or until lightly browned.
  5. Blend filling ingredients together until creamy.
  6. When cookies are cool, spread frosting on bottom of cookie. Top with second cookie, and gently press together.
