Caramel Whoopie Pie Cookies
- 1 package (16.5 oz.) caramel cake mix
- ½ cup silken tofu
- ¼ cup vegetable oil
- 1 egg
Filling
- ¼ cup margarine, softened
- 4 oz. softened soy cream cheese
- 1 teaspoon vanilla
- 2 cups powdered sugar
- In large bowl, combine cake mix, tofu, vegetable oil and egg.
- Blend until all ingredients are moistened.
- Drop batter by tablespoon on greased cookie sheet.
- Bake at 350 F for 10–12 minutes or until lightly browned.
- Blend filling ingredients together until creamy.
- When cookies are cool, spread frosting on bottom of cookie. Top with second cookie, and gently press together.
