Blueberry Maple Muffins

Batter Ingredients:

  • 1 1/2 cups soy flour blend
  • 1/4 cup granulated sugar
  • 1 tsp. baking powder
  • 1 1/2 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1/4 tsp. baking soda
  • 1 cup blueberries
  • 1/2 cup vanilla soy milk
  • 1/2 cup maple syrup
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 tsp. vanilla

Maple Glaze Ingredients:

  • 1/2 cup powdered sugar
  • 1 Tbsp. vanilla soy milk
  • 1 tsp. maple syrup

Directions:

  1. In a large mixing bowl, combine soy flour blend, sugar, baking powder, cinnamon, salt and baking powder
  2. Gently stir in blueberries to coat with flour
  3. In a small mixing bowl, combine soy milk, maple syrup, vegetable oil, egg and vanilla; whisk to blend
  4. Add liquid mixture to dry ingredients and mix until only blended
  5. Portion batter into greased muffin tins or lined with paper liners
  6. Bake at 400 degrees for 18 to 20 minutes or until wooden pick inserted comes out clean
  7. For the glaze – in a small mixing bowl, combine powdered sugar, vanilla soy milk and maple syrup until mixture is smooth. Drizzle over cooled muffins
