Blueberry Maple Muffins
- 1 1/2 cups soy flour blend
- 1/4 cup granulated sugar
- 1 tsp. baking powder
- 1 1/2 tsp. ground cinnamon
- 1/2 tsp. salt
- 1/4 tsp. baking soda
- 1 cup blueberries
- 1/2 cup vanilla soy milk
- 1/2 cup maple syrup
- 1/3 cup vegetable oil
- 1 egg
- 1 tsp. vanilla
Maple Glaze Ingredients:
- 1/2 cup powdered sugar
- 1 Tbsp. vanilla soy milk
- 1 tsp. maple syrup
Directions:
- In a large mixing bowl, combine soy flour blend, sugar, baking powder, cinnamon, salt and baking powder
- Gently stir in blueberries to coat with flour
- In a small mixing bowl, combine soy milk, maple syrup, vegetable oil, egg and vanilla; whisk to blend
- Add liquid mixture to dry ingredients and mix until only blended
- Portion batter into greased muffin tins or lined with paper liners
- Bake at 400 degrees for 18 to 20 minutes or until wooden pick inserted comes out clean
- For the glaze – in a small mixing bowl, combine powdered sugar, vanilla soy milk and maple syrup until mixture is smooth. Drizzle over cooled muffins
