Better-for-you Blender Brownies
Better-for-you Blender Brownies
  • 3 Tablespoons cream
  • 2 Tablespoons vegetable oil
  • ½ cup cooked edamame
  • ½ cup all-purpose flour
  • ¼ cup sugar
  • ¼ cup cocoa powder
  • ½ teaspoon baking powder
  • 1 teaspoon red miso
  • 2 teaspoons vanilla
  • 1½ ounces dark chocolate, coarsely chopped

In blender, combine cream, vegetable oil and edamame. Blend until smooth. Add remaining ingredients, except for chopped chocolate, to blender; blend until smooth. Pour into a parchment-lined bread pan and top with chocolate. Bake at 350 F for 20 minutes. Cut into eight servings.
