Berry Bars
- 1 cup soy-flour blend
- ¾ cup packed brown sugar
- ½ cup margarine
- 2½ cups quick-cooking oatmeal
- 2 Tablespoons orange juice
- ¼ cup packed brown sugar
- 2 Tablespoons soy-flour blend
- 1½ cups fresh blueberries
- 1½ cups fresh raspberries

Heat oven to 375 F. Combine 1 cup soy-flour blend and ¾ cup brown sugar and margarine in bowl; cut in margarine. Add oatmeal, and thoroughly combine. Remove 1½ cups and set aside. Stir in orange juice; press into bottom of greased 9-by-13-inch baking pan. Combine in mixing bowl soy-flour blend and brown sugar. Add fruit, and toss to coat. Place fruit mixture on top of crust in baking pan. Sprinkle with reserved crumb topping. Bake for 30–35 minutes or until lightly browned. Cool. Cut into 16 bars. Refrigerate.
