Basic Yeast Dough

1 cup warm water
1 package ¼- oz. (2 ¼ teaspoons) yeast
1 tablespoon sugar
2 tablespoons vegetable oil
2 ½ – 3 cups soy flour blend
½ teaspoons salt

Place warm water in large bowl and sprinkle with yeast and 1 tablespoon sugar; stir to dissolve and let stand 5 minutes; mixture will begin to bubble.
Add vegetable oil, 2 cups soy flour blend; salt and mix well.
Add enough remaining soy flour blend to make a soft dough.
Knead about 6 minutes then place in greased bowl; turn dough over to grease top of dough.
Cover and let rise until dough is double in size; about 45 minutes.
Divide dough in portions to make individual pizzas, pretzels, rolls, letters, braided bread sticks, teddy bears or other shapes.  Place similar shapes and sizes on greased baking sheets.
Cover: let rise until double.

Bake at 350 degrees about 20 minutes for teddy bears (depending on size)

Bake 375 degrees for 12 to 15 minutes for rolls and pretzels
