Banana Blueberry Muffins

Ingredients:

  • 2 cups all-purpose flour
  • 2/3 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 3/4 cup soy milk
  • 1/4 cup vegetable oil
  • 1/2 cup mashed banana (1 medium banana)
  • 1 egg
  • 1 cup fresh blueberries

Directions:

  1. In a mixing bowl, combine flour, sugar, baking powder, baking soda, salt and cinnamon
  2. In a second mixing bowl, combine soy milk, vegetable oil, mashed banana and egg
  3. Add blueberries to flour mixture and toss to coat
  4. Add liquid mixture to flour mixture and stir to moisten all ingredients
  5. Fill greased or paper-lined muffin about three fourths full
  6. Bake at 400 degrees for 18 to 20 minutes or until wooden pick inserted comes out clean

Makes 12 muffins
