Bacon & Chive Biscuits

  • 2 cups soy-flour blend
  • 3 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ⅓ cup shortening
  • ½ cup chopped, cooked bacon
  • 2 Tablespoons chopped chives
  • ¾ cup buttermilk

Combine soy-flour blend, baking powder, baking soda and salt in medium mixing bowl. Cut in shortening until coarse crumbs. Stir in bacon and chives. Add buttermilk, and stir until all ingredients are moistened to make a soft dough. Place dough on lightly floured surface and knead gently about 10 times. Roll dough to ½ inch thick. Using a 2-inch cutter, cut dough and place on ungreased baking sheet. Bake at 400 F for 12–15 minutes or until golden brown.
