Applesauce Muffins

½ cup
margarine
1 cup sugar
1 egg
1 cup applesauce
1 teaspoon vanilla
1 ½ cups all-purpose flour
½ cup soy flour
1 teaspoon cinnamon
½ teaspoon allspice
1 teaspoon baking soda
½ cup raisins 

Cream margarine and
sugar in mixing bowl.  Add egg, applesauce and vanilla; blend well.   Combine
dry ingredients, all-purpose flour, soy flour, cinnamon, allspice and baking
soda; add to creamed mixture.  Fold in raisins.  Fill muffin tins ¾ full.   Bale
at 350

for 15 to 20 minutes or until muffins test done.  Cool in pan for about 10
minutes then remove and place on cooling rack.  Makes about 2 dozen muffins.
