Applesauce Bran Muffins
  • ¾ cup soy-flour blend
  • ¾ cup whole-wheat flour
  • ¾ cup bran cereal
  • ½ cup sugar
  • 1 teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 cup applesauce
  • ½ cup vegetable oil
  • 2 eggs, slightly beaten
  • 1 teaspoon vanilla

In large bowl, combine soy-flour blend, whole-wheat flour, bran cereal, sugar, baking soda, cinnamon and salt. In medium bowl, combine applesauce, vegetable oil, eggs and vanilla. Add liquid mixture to flour mixture and stir just until combined. Spoon batter into greased muffin pan or paper-lined baking cups. Bake at 400 F for 15–18 minutes or until wooden pick inserted in center comes out clean.
