Apple Quick Bread

(Perfect for gift giving)

2 ½ cups all-purpose flour
½ cup soy flour
2 teaspoons baking soda
2 teaspoons cinnamon
¾ teaspoon salt
1 cup grated apple (baking variety)
1 cup packed brown sugar
½ cup buttermilk
½ cup vegetable oil
4 eggs
Combine in large bowl all-purpose flour, soy flour, baking soda, cinnamon and salt. In medium mixing bowl combine grated apple, brown sugar, buttermilk, vegetable oil and eggs. Pour liquid mixture into dry mixture and stir just until blended. Pour mixture into two greased 8×4-inch loaf pans. May also be baked in greased uncoated metal cans; filling about two-thirds full; place filled cans on baking sheet. Bake at 350 degrees. Bake loaf pans for 45 to 50 minutes; bake metal cans for 20 to 30 minutes depending on size. Check for doneness with by inserting a wooded pick. Cool 5 minutes then remove from pan.
