Apple Hand Pies

Ingredients:

  • 2 cups all-purpose flour
  • 2 Tablespoons granulated sugar
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 Tablespoons margarine
  • 2 Tablespoons vegetable shortening
  • 6 Tablespoons ice water
  • 3 cups roughly chopped, peeled apples
  • 1/2 cup granulated sugar
  • 1 Tablespoon cornstarch
  • 1/4 teaspoon cinnamon
  • 1/4 cup water
  • 2 Tablespoons soy milk

Directions:

  1. To make the pastry, combine the flour, 2 Tablespoons granulated sugar, baking powder and salt in a mixing bowl.
  2. Add the margarine and vegetable shortening; cut-in with pastry blender.
  3. Add 6 Tablespoons cold water and mix to form dough.
  4. Knead on lightly floured board and wrap in plastic wrap; refrigerate for an hour.
  5. Place apples, 1/2 cup granulated sugar, cornstarch, cinnamon and 1/4 cup in saucepan.
  6. Cook about 10 minutes over medium until apples are tender and mixture thickens.
  7. Divide chilled dough into eight pieces and roll each into a 6-inch circle.
  8. Place about 2 Tablespoons filling in the center of each round than fold in half to close and crimp the edges to seal.
  9. Brush with soy milk.
  10. Bake at 400°F for 20 to 30 minutes until golden brown. Sprinkle with powdered sugar before serving if desired.

Makes 8 hand pies.
