Apple Custard Pie
Prepared 9-inch pastry crust
3 cups sliced peeled apples
1/3 cup sugar
1 teaspoon cinnamon
1 cup vanilla soy milk
1 egg
½ cup sugar
Arrange apples over the
crust. Combine sugar and cinnamon; sprinkle over apples. Bake at 375o
for 20 minutes. To make custard, whisk soy milk, egg and sugar until smooth.
Pour over apples. Bake 25 to 30 minutes longer until knife inserted in center
comes out clean. Cool. Refrigerate.
