Apple Cinnamon Scones

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup soy flour
  • 1/2 cup quick-cooking oatmeal
  • 1/4 cup granulated sugar
  • 3 tsp. baking powder
  • 1/4 tsp. salt
  • 1/3 cup cold margarine
  • 2 eggs
  • 1/4 cup soy sour cream
  • 2 Tbsp. soy milk
  • 3/4 cup chopped apple

Filling Ingredients:

  • 3 Tbsp. brown sugar
  • 1/2 tsp. cinnamon
  • 1 Tbsp. quick-cooking oatmeal
  • 1 Tbsp. margarine

Topping Ingredients:

  • 1 Tbsp. sugar
  • 1/2 tsp. cinnamon

Directions:

  1. In a medium bowl, combine dry ingredients; cut in margarine until mixture resembles fine crumbs
  2. Add chopped apples; toss to coat with flour mixture
  3. In a small bowl, beat eggs; remove 1 Tbsp. and set aside for glaze
  4. To beaten eggs; add soy sour cream and soy milk; blend
  5. Stir liquid mixture into crumb mixture until the dough clings together
  6. Turn dough onto lightly floured surface; knead about 12 times
  7. Divide dough in half and pat one portion into a 7-inch circle on a greased baking sheet
  8. Combine the filling ingredients; sprinkle over dough
  9. Roll out remaining dough into a 7-inch circle; place over filling
  10. Brush with reserved 1 Tbsp. of egg
  11. Combine 1 Tbsp. sugar and 1/2 tsp. cinnamon for topping and sprinkle over scones
  12. Score into wedges; do not separate
  13. Bake at 400 degrees for 15 to 20 minutes or until golden brown; cool slightly and serve warm
