Apple Cake With Caramel Glaze
- 2 cups sugar
- 1½ cups vegetable oil
- 3 eggs
- 2 teaspoons vanilla
- 3 cups soy-flour blend
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups peeled and chopped apple
- ½ cup margarine
- ½ cup brown sugar
- 2 teaspoons vanilla soy milk

Combine sugar, vegetable oil, eggs and vanilla in large mixing bowl. Beat until light and fluffy. Add soy-flour blend, cinnamon, baking soda and salt; mix until blended. Stir in apples. Pour mixture into greased and floured 12-cup fluted baking pan. Bake at 350 F for 70–80 minutes. Test doneness with wooden skewer. Let cool for 15 minutes, then remove from pan to wire rack to cool.
Combine margarine, brown sugar and vanilla soy milk in medium saucepan and heat until mixture boils. Lower heat and continue cooking for 2 minutes while stirring. Remove from heat. Serve cake with glaze.
