Apple–Applesauce Cake
  • 1 cup margarine
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups soy-flour blend
  • 1 cup white whole-wheat flour
  • 2 teaspoons pumpkin-pie spice
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 2 cups unsweetened applesauce
  • 1 cup grated apple
  • 1 cup raisins

Combine in mixing bowl margarine and sugar; cream until light and fluffy. Add eggs and vanilla; mix well. In separate bowl, sift together dry ingredients: soy-flour blend, white whole-wheat flour, pumpkin-pie spice, baking soda and baking powder. Add dry ingredients to creamed mixture alternately with applesauce. Stir in grated apples and raisins. Pour mixture into a greased 10-inch fluted tube pan. Bake at 350 F for 60–65 minutes, until wooden tester inserted in cake comes out clean. Cool 10 minutes then remove from pan.

Optional: Top with whipped cream and sprinkled cinnamon.
