Thumbprint Surprise Cookies

Ingredients:

  • 1 cup margarine
  • 1/4 cup granulated sugar
  • 1 tsp. almond extract
  • 2 cups soy flour blend
  • 1/4 tsp. salt
  • colored sugar sprinkled
  • favorite jam (strawberry, peach, grape, etc)

Directions:

  1. In a large bowl, combine margarine, sugar and almond extract; cream until light and fluffy
  2. Add soy flour blend and salt; mix until combined to make a soft cookie dough
  3. Roll 1 Tbsp. of dough into a ball; roll in choice of colored sugar sprinkles
  4. Place dough ball on ungreased baking sheet; flatten slightly
  5. Indent center by pressing with your thumb
  6. Fill indention with 1/2 tsp. of jam
  7. Bake at 400 degrees for 8 to 10 minutes or until lightly browned

Makes 2 dozen cookies
