Chocolate Surprise Cookies
- 1 cup margarine, softened
- 1/3 cup packed brown sugar
- 1/3 cup granulated sugar
- 1 tsp. vanilla
- 1 1/2 cups soy flour blend
- 1/3 cup baking cocoa
- 1/4 tsp. salt
- 24 chocolate candy pieces or caramel covered chocolates, remove wrappers (1 pkg. will contain more than you need)
- powdered sugar, optional
Directions:
- In a large mixing bowl, combine margarine, brown sugar, granulated sugar and vanilla; cream until fluffy
- Add soy flour blend, baking cocoa, baking soda and salt to creamed mixture; mixing until combined
- Roll 1 1/2 to 2 Tbps. dough into a ball to completely cover one chocolate
- Place on ungreased baking sheet
- Bake at 375 degree for 12 to 14 minutes; remove from oven and cool about one minute then place on cooling rack
- Sprinkle with powdered sugar if desired before serving
Makes about 2 dozen cookies
