Chocolate Surprise Cookies

Ingredients:

  • 1 cup margarine, softened
  • 1/3 cup packed brown sugar
  • 1/3 cup granulated sugar
  • 1 tsp. vanilla
  • 1 1/2 cups soy flour blend
  • 1/3 cup baking cocoa
  • 1/4 tsp. salt
  • 24 chocolate candy pieces or caramel covered chocolates, remove wrappers (1 pkg. will contain more than you need)
  • powdered sugar, optional

Directions:

  1. In a large mixing bowl, combine margarine, brown sugar, granulated sugar and vanilla; cream until fluffy
  2. Add soy flour blend, baking cocoa, baking soda and salt to creamed mixture; mixing until combined
  3. Roll 1 1/2 to 2 Tbps. dough into a ball to completely cover one chocolate
  4. Place on ungreased baking sheet
  5. Bake at 375 degree for 12 to 14 minutes; remove from oven and cool about one minute then place on cooling rack
  6. Sprinkle with powdered sugar if desired before serving

Makes about 2 dozen cookies
