Banana Blueberry Muffins
- 2 cups all-purpose flour
- 2/3 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 3/4 cup soy milk
- 1/4 cup vegetable oil
- 1/2 cup mashed banana (1 medium banana)
- 1 egg
- 1 cup fresh blueberries
Directions:
- In a mixing bowl, combine flour, sugar, baking powder, baking soda, salt and cinnamon
- In a second mixing bowl, combine soy milk, vegetable oil, mashed banana and egg
- Add blueberries to flour mixture and toss to coat
- Add liquid mixture to flour mixture and stir to moisten all ingredients
- Fill greased or paper-lined muffin about three fourths full
- Bake at 400 degrees for 18 to 20 minutes or until wooden pick inserted comes out clean
