Pumpkin Walnut Bread
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1/4 teaspoon salt
- 2 eggs
- 1 cup canned pumpkin puree
- 1/2 cup vegetable oil
- 1/3 cup vanilla soy milk
- 1 teaspoon vanilla
- 1 cup toasted coarsely chopped walnuts
Directions:
- In a mixing bowl combine all-purpose flour, sugar, baking soda, pumpkin pie spice and salt
- Add toasted walnuts
- In a second bowl, whisk the eggs, pumpkin puree, vegetable oil, soy milk and vanilla
- Add liquid mixture to the flour mixture; stir to combine
- Pour batter into greased 9×5-inch loaf pan
- Bake at 350 degrees for 55 to 65 minutes until browned and wooden pick comes out clean
Makes 1 loaf (12 slices)
