Pumpkin Walnut Bread

Ingredients:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1/3 cup vanilla soy milk
  • 1 teaspoon vanilla
  • 1 cup toasted coarsely chopped walnuts

Directions:

  1. In a mixing bowl combine all-purpose flour, sugar, baking soda, pumpkin pie spice and salt
  2. Add toasted walnuts
  3. In a second bowl, whisk the eggs, pumpkin puree, vegetable oil, soy milk and vanilla
  4. Add liquid mixture to the flour mixture; stir to combine
  5. Pour batter into greased 9×5-inch loaf pan
  6. Bake at 350 degrees for 55 to 65 minutes until browned and wooden pick comes out clean

Makes 1 loaf (12 slices)
