Pumpkin Biscuits
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon granulated sugar
- 1/2 teaspoon salt
- 1/2 cup margarine, cold, sliced
- 1/2 cup pureed pumpkin
- 1/4 cup vanilla soy milk
Directions:
- In a mixing bowl combine all-purpose flour, baking powder, sugar and salt; whisk together
- Add margarine and cut-in with pastry blender to make coarse crumbs
- In a small bowl combine the pumpkin and soy milk; add to flour mixture and stir to form dough
- Knead on lightly floured board; roll to 1-inch thickness and cut biscuits using a 2-inch round
- Place biscuits on baking sheet; bake at 400 degrees for 15 to 20 minutes until browned.
