Summer Apricot Coffee cake
1 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons grated orange peel
1/2 cup margarine
2 eggs
1 cup vanilla soy milk
1 teaspoon vanilla
3 apricots, sliced
Topping:
1/3 cup brown sugar
1/4 cup all-purpose flour
2 tablespoons margarine
1 teaspoon cinnamon
- In a large bowl, combine sugar, baking powder, baking soda, salt and grated orange peel.
- Using a pastry blender, cut in margarine.
- Combine eggs, soy milk and vanilla in a mixing bowl.
- Add liquid mixture to dry ingredients and stir just until blended.
- Spoon batter into 9-inch greased baking pan. Arrange fruit on top of batter.
- Blend topping ingredients and sprinkle over fruit.
- Bake at 350 degrees for 50 to 55 minutes or until wooden pick inserted comes out clean.
