Apricot Lemon Bars
1 cup all-purpose flour
¼ cup powdered sugar
¼ cup margarine, softened
¼ cup soy cream cheese
1 cup granulated sugar
1 teaspoon baking powder
¼ teaspoon salt
2 eggs
¼ cup fresh lemon juice
1 tablespoon grated lemon peel
½ cup flaked coconut
½ cup chopped dried apricots (10 apricot halves)
Mix flour, powdered sugar, margarine, and soy cream cheese until dough forms. Press dough evenly on bottom and up ½ inch sides of ungreased 8×8 – inch baking pan. Bake 20 minutes at 350o. Combine in mixing bowl sugar, baking powder and salt. Add eggs, lemon juice and lemon peel; thoroughly combine. Stir in coconut and apricots. Pour mixture over hot crust; bake an additional 25 minutes or until set. Cut cooled bars. Sprinkle with additional powdered sugar if desired.
