Apricot Scones
- 1 ¼ cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- ¼ cup cold margarine
- ½ cup dried apricot, chopped
- 1 egg, lightly beaten
- ¼ cup vanilla soy beverage
- ¼ cup soy sour cream
Combine In large bowl flour, sugar, baking powder and salt. Cut in margarine until crumbly. Stir in dried apricots. Add egg, vanilla soy beverage and soy sour cream; stir only to blend. Place dough on lightly floured surface and knead and shape dough into a round disc. Lightly roll into a 6-inch circle. Cut into six wedges. Sprinkle with sugar. Place on baking sheet. Bake 12-14 minutes at 400 degrees.
