Fudgy Turtle Brownies
1 cup soy flour blend
¼ cup cocoa powder
½ teaspoon baking powder
½ teaspoon salt
½ cup margarine
8 ounces bittersweet chocolate, broken into pieces
1 cup granulated sugar
1 cup packed brown sugar
4 eggs
2 teaspoons vanilla
2 cups pecan halves
½ cup caramel topping
2 ounces semisweet chocolate, melted
Sea salt, optional topping
Line bottom and sides of 9×13-inch lightly greased baking pan with parchment paper; allow extra parchment paper on sides. Combine soy flour blend, cocoa, baking powder and salt in large bowl; set aside. Place in microwave safe bowl margarine and bittersweet chocolate. Heat on low microwave power until melted; stir frequently. Add granulated sugar and brown sugar to melted chocolate mixture. Add eggs one at a time; whisk after each egg. Stir in vanilla. Add reserved flour mixture; stir just until combined. Pour batter into prepared pan. Top with a layer of pecans.
Bake at 350 degrees for 28-33 minutes. Test with wooden pick; there should be some crumbs on the wooden pick. Remove from oven and cool.
Drizzle caramel topping over cooled brownies. Drizzle with melted chocolate. Sprinkle with sea salt as desired.
