Carrot Raisin Cake Mix Cookies With Orange Glaze
- 1 package (15 ounces) carrot cake mix (2 layer cake mix)
- ½ cup silken tofu
- ¼ cup vegetable oil
- 1 egg
- ½ cup raisins*

Glaze
- 1 cup powdered sugar
- 2 Tablespoons orange juice
- 1 teaspoon grated orange peel
- Chopped pecans, optional

Combine cake mix, tofu, vegetable oil and egg in mixing bowl, and blend until all ingredients are moistened. Stir in raisins. Drop batter by spoonful on baking sheet. Bake at 350 F for 15–20 minutes or until browned. Frost cooled cookies with glaze, and sprinkle with pecans if desired.
Makes 24 cookies
* Condition raisins by placing them in a microwave-safe bowl and adding ½ cup water. Microwave for 1 minute; let set about 5 minutes, and drain water.
