Layered Fruit Dessert
1 cup halved strawberries
1 cup blueberries
1 cup raspberries
1 cup blackberries
Honey roasted soynuts, optional
Strawberry Cream mixture:
½ cup soy cream cheese, softened
1/3 cup strawberry jelly
½ cup whipped whipping cream
Strawberry Vinaigrette:
1/3 cup strawberry jelly
1 teaspoon balsamic vinegar
1 teaspoon vegetable oil
Combine in small mixing bowl soy cream cheese, strawberry jelly until smooth.
Add whipped cream and fold to blend.
Combine in second small bowl strawberry jelly, balsamic vinegar and vegetable oil.
Layer in dessert goblets or serving glasses, ¼ cup fruit, 1 tablespoon strawberry cream mixture; drizzle with one teaspoon strawberry vinaigrette.
Repeat layers.
Top with honey roasted soynuts and additional whipped cream if desired.
