Loaded Cheesy Muffins
Ingredients:
- 1½ cups all-purpose flour
- 2 Tablespoons sugar
- 3 teaspoons baking powder
- ¼ cup chopped red bell pepper
- ¼ cup chopped green onion
- 4 strips bacon, cooked and crumbled, reserve drippings
- 1 Tablespoon bacon drippings
- ⅓ cup vegetable oil
- 1 egg
- ½ cup plain soy milk
- 2 ounces pasteurized, processed cheese
Directions:
- In a large bowl, combine flour, sugar and baking powder
- Add bacon, red bell pepper and green onion stir
- In a medium bowl, combine bacon drippings, vegetable oil, egg and soy milk
- Add liquid mixture to flour mixture and stir until just combined
- Spoon batter into greased muffin pan or lined with paper baking cups
- Cut cheese into twelve 1/2 inch cubes
- Press a cheese cube down in the center of each muffin batter
- Bake at 400 degrees for 15 to 18 minutes or until wooden pick inserted in center comes out clean
Makes 12 muffins
