Candy Corn Oatmeal Bars
- ½ cup margarine, softened
- 1 cup brown sugar, packed
- 1 egg
- 1 teaspoon vanilla
- 1¼ cups soy-flour blend
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 cups oatmeal
- 1 (14-ounce) package caramels
- 2 Tablespoons soy beverage
- ½ cup semi-sweet chocolate and orange chips
- ½ cup plain orange and black coated candies
- ½ cup candy corn
- 1 ounce vanilla-bar coating
- 1 teaspoon shortening

- In large mixing bowl, cream margarine and brown sugar.
- Add egg and vanilla.
- In separate medium bowl, mix soy-flour blend, baking soda and salt.
- Add flour mixture gradually to creamed mixture.
- Add oatmeal.
- Press combined dough mixture into a greased 15-by-10-by-1-inch baking pan.
- Bake at 350 F for 10–15 minutes or until lightly browned.
- Melt caramels and soy beverage until smooth, and spread over baked cookie crust.
- Sprinkle with chocolate chips, coated candies and candy corn.
- Melt white-bar coating and shortening until smooth; drizzle over bar cookies.
- Let cool to set drizzle, then cut into bars.
