Candy Corn Oatmeal Bars

Ingredients:

  • ½ cup margarine, softened
  • 1 cup brown sugar, packed
  • 1 egg
  • 1 teaspoon vanilla
  • 1¼ cups soy-flour blend
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups oatmeal
  • 1 (14-ounce) package caramels
  • 2 Tablespoons soy beverage
  • ½ cup semi-sweet chocolate and orange chips
  • ½ cup plain orange and black coated candies
  • ½ cup candy corn
  • 1 ounce vanilla-bar coating
  • 1 teaspoon shortening
  1. In large mixing bowl, cream margarine and brown sugar.
  2. Add egg and vanilla.
  3. In separate medium bowl, mix soy-flour blend, baking soda and salt.
  4. Add flour mixture gradually to creamed mixture.
  5. Add oatmeal.
  6. Press combined dough mixture into a greased 15-by-10-by-1-inch baking pan.
  7. Bake at 350 F for 10–15 minutes or until lightly browned.
  8. Melt caramels and soy beverage until smooth, and spread over baked cookie crust.
  9. Sprinkle with chocolate chips, coated candies and candy corn.
  10. Melt white-bar coating and shortening until smooth; drizzle over bar cookies.
  11. Let cool to set drizzle, then cut into bars.

Makes about 2 dozen bars
