Valentine Stand-up Cookies
  • 1 cup margarine, softened
  • ⅔ cup granulated sugar
  • 1 egg
  • 2 teaspoons vanilla
  • 2 cups soy-flour blend
  • ¼ teaspoon baking powder
  • ⅛ teaspoon salt
  • Red food coloring
  • Plain or red-colored sugar, optional

Combine in large bowl, margarine and granulated sugar, until light and fluffy. Add egg and vanilla; mix thoroughly. In separate bowl, combine dry ingredients (soy-flour blend, baking powder and salt). Add to creamed mixture, and mix well. Divide dough in half. Form one portion into ball and flatten slightly; wrap in plastic wrap. Blend in red food coloring to second portion of dough to color dough to desired color; then form into ball and flatten slightly; wrap in plastic wrap. Chill each dough portion for one hour. Roll each portion of dough separately on floured surface to ⅛-inch thickness. Cut dough using 2-inch, heart-shaped, floured cookie cutter. Place on ungreased cookie sheet about 1 inch apart. At top of heart center, make about a ½-inch slit and spread apart about ⅜ inch. Sprinkle with plain or colored sugar if desired. Bake cookies at 375 F for 6–8 minutes or until lightly browned. Cool slightly before removing from cookie sheet. Cool completely on wire racks. Interlock two cookies together at opening to form stand-up cookie.
