Apple Cider Crisp
- 5 cups apples, peeled and sliced
- 1 cup sugar
- ⅓ cup soy-flour blend
- 1 teaspoon cinnamon
- ⅓ cup apple cider or apple juice
- ½ cup brown sugar, firmly packed
- ½ cup soy-flour blend
- ½ cup oatmeal
- ½ teaspoon cinnamon
- ⅓ cup margarine
Place apples in large mixing bowl and combine with sugar, ⅓ cup soy-flour blend and 1 teaspoon cinnamon. Add apple cider, and mix together. Place apple mixture into 8-by-8-by-2-inch baking dish. In separate mixing bowl, combine brown sugar, ½ cup soy-flour blend, oatmeal and ½ teaspoon cinnamon with margarine until crumbly. Place mixture on top of apple mixture and bake at 375 F for 25–30 minutes or until apples are tender and lightly browned.
Soy-Flour Blend
- 7 cups all-purpose flour
- 1 cup soy flour
Combine both flours and keep in canister to use for any recipe using all-purpose flour as an ingredient. Makes 8 cups blended flour
