Pumpkin Patch Bars
- 4 eggs
- 1 can (15 oz.) pumpkin
- 1½ cups sugar
- ½ cup brown sugar, firmly packed
- 1 cup vegetable oil
- 1½ cups all-purpose flour
- ½ cup soy flour
- 2 teaspoons baking powder
- 2 teaspoons pumpkin pie spice
- 1 teaspoon baking soda
- ¼ teaspoon salt
Preheat oven to 350 degrees. Combine in large bowl eggs, pumpkin, sugar, brown sugar and vegetable oil until thoroughly combined. Sift together all-purpose flour, soy flour, baking powder, pumpkin pie spice, baking soda and salt. Add dry mixture to pumpkin mixture; mix thoroughly. Pour batter into greased and floured jelly roll pan (15-by-10-inch). Bake at 350 degrees for 30 to 35 minutes or until done when tested with a wooden pick. Cool. Frost with White Creamy Frosting then decorate with candy pumpkins and green decorating icing for vines. Makes 48 bars
White Creamy Frosting
- 2 cups powdered sugar
- ¼ cup margarine, softened
- ⅓ cup soy cream cheese
- 1 teaspoon vanilla
- 1 teaspoon vanilla soy milk
Combine powdered sugar, margarine, soy cream cheese, vanilla and soy milk in small mixing bowl until smooth. Spread over cooled bars.
