Skillet Apple Cherry Crisp
- 2 Tablespoons margarine
- 6 cups sliced apples
- ½ cup dried cherries
- 2 Tablespoons brown sugar
- 2 Tablespoons soy-flour blend
- ½ teaspoon ground cinnamon

Streusel Topping
- ½ cup soy-flour blend
- ½ cup oatmeal
- ½ cup brown sugar
- ½ teaspoon cinnamon
- ¼ cup margarine

Sauté apple slices, dried cherries and brown sugar with margarine in 10-inch iron skillet for 5 minutes. Add soy-flour blend and cinnamon; stir.
In small mixing bowl, combine soy-flour blend, oatmeal, brown sugar and cinnamon. Cut in margarine with pastry blender or fork until crumbly and well mixed. Sprinkle topping evenly over apples. Bake at 350 F about 45 minutes or until lightly browned. Top with whipped topping or ice cream when serving.
