Whole-Wheat & Soy Pancake Mix

  • 2 cups white whole-wheat flour
  • 2 cups soy-flour blend
  • 1 cup quick-cooking oatmeal
  • ¼ cup granulated sugar
  • 2 Tablespoons baking powder
  • ¼ teaspoon salt
  1. In a large bowl, combine white whole-wheat flour, soy-flour blend, oatmeal, sugar, baking powder and salt.
  2. Using a whisk, mix until thoroughly combined.
  3. Store in an airtight container in a cool place.

Makes 5 cups
