Waldorf Chicken Salad

2 pounds boneless chicken, cooked
1 cup apples, peeled and chopped
1 cup grapes, halved
1 can (11ounces) mandarin oranges, drained
½ cup chopped celery
2 tablespoons raisins
2 tablespoons chopped walnuts
½ cup mayonnaise
½ cup silken soft tofu

Cut cooked chicken into bite size pieces and mix with apples, grapes,
oranges, celery, raisins and walnuts. Blend mayonnaise and tofu until creamy;
add to chicken and blend. Chill and serve on lettuce leaf. Serves 4.
