Vanilla Confetti Popcorn
Vanilla Confetti Popcorn
  • ½ cup corn syrup
  • 1 package (3.5 ounces) vanilla instant pudding
  • 2 Tablespoons margarine
  • 1 teaspoon vanilla
  • 10 cups popped popcorn
  • ½ cup roasted and salted soy nuts
  • 1 Tablespoon candy sprinkles
  1. Preheat oven to 250 F.
  2. Grease 15-by-10-inch baking pan.
  3. In a microwave-safe, medium-size bowl, combine the corn syrup, dry pudding mix, margarine and vanilla.
  4. Stir until smooth.
  5. Place mixture in microwave for 30 seconds.
  6. Stir. Heat an additional 15 seconds.
  7. Place popcorn in large bowl and combine with soy nuts.
  8. Drizzle warm vanilla mixture over popcorn mixture.
  9. Add sprinkles and toss to coat.
  10. Place popcorn on prepared baking pan.
  11. Bake for 10 minutes.
  12. Stir and bake an additional 10 minutes.
  13. Remove from oven; cool.
  14. Break into pieces.

Makes about 12 cups
