Turkey Tenderloin with Miso Apricot Preserves

Ingredients:

  • 1 1/4 lbs. turkey tenderloin*
  • 3/4 cup apricot preserves
  • 2 Tbsp. red miso

Directions:

  1. Preheat oven to 400F.
  2. Place tenderloin in a roasting pan lined with parchment paper, coated with nonstick spray. Season turkey tenderloins with salt and pepper.
  3. In a small bowl, combine the apricot preserves and miso.
  4. Mix well, spoon some over the turkey. Roast 35-40 minutes, until thermometer inserted into the thickest part registers at least 160F.
  5. Let turkey rest for 10 minutes before cutting is crosswire into 1/2 inch thick slices.
  6. Serve with apricot sauce.
