Soynut Butter Filled Cookies
  • ½ cup margarine
  • ½ cup soynut butter
  • ½ cup granulated sugar
  • ½ cup firmly packed brown sugar
  • 1 egg
  • ½ cup soy flour
  • ½ cup whole-wheat flour
  • ½ cup all-purpose flour
  • 1 teaspoon baking soda

Preheat oven to 375 F. Combine margarine, soynut butter and brown sugar in a large bowl. Beat with an electric mixer on medium speed until well blended. Add egg. Beat just until blended. Combine flours and baking soda. Add to creamed mixture at low speed. Mix just until blended. Drop by teaspoonful 2 inches apart on ungreased baking sheets. Flatten slightly. Bake for 10–12 minutes or until lightly brown. Remove cookies to wire rack to cool completely. Fill and decorate as desired.

Makes 24 cookies

Decorating Ideas

1️⃣ Fluffy Cream Filling

  • 1 cup powdered sugar
  • ¼ cup soy cream cheese, softened
  • ½ cup marshmallow creme

In medium mixing bowl, combine powdered sugar and soy cream cheese until blended well. Stir in marshmallow creme. Spread on bottom of cookie, and top with second cookie for a sandwich filling.

Makes ¾ cup

2️⃣ Chocolate Fudge Filling

  • 1 cup semisweet chocolate chips
  • ½ cup soy sour cream

In a small saucepan, heat chocolate chips over low heat until melted; stirring constantly. Remove from heat and stir in soy sour cream. Cool. Spread on bottom of cookie, and top with second cookie for a sandwich filling.

Makes ¾ cup

3️⃣ Vanilla Drizzle

  • ¼ cup white chocolate chips
  • ¾ teaspoon shortening

Heat white chocolate chips and shortening in microwave-safe bowl at 30-second intervals until melted. Drizzle on cookie as desired.

4️⃣ Chocolate Drizzle

  • ¼ cup dark chocolate chips
  • ¾ teaspoon shortening

Heat dark chocolate chips and shortening in microwave-safe bowl at 30-second intervals until melted. Drizzle on cookie as desired.

5️⃣ Salted Soy Nuts

  • ¼ cup salted soy nuts, chopped

Sprinkle on frosted cookies as desired.
