Soy Stuffed Shells
Ingredients:
- 1/2 box jumbo pasta shells (about 20 shells)
- 2 cups Impossible Savory Ground Soy Sausage, browned
- 2 cups tomato & basil pesto sauce, divided
- 1/4 cup fresh parsley, chopped
- 1/2 cup fresh basil, chopped
- 1 egg
- 1 pkg. Simple Truth Organic Silken Soft Tofu, mashed
- 2 cups shredded mozzarella cheese, divided
- 3/4 cup grated parmesan cheese, divided
Directions:
- Cook pasta shells according to package directions, drain
- Preheat oven to 350F and spray bottom of a baking dish with non-stick cooking spray
- Mix 1 cup tomato and basil sauce with soy sausage
- In a large bowl, beat the egg. Stir in tofu, 1 3/4 cups mozzarella cheese, 1/2 cup parmesan cheese, basil and parsley.
- To assemble, spread tomato basil sauce and soy sausage mixture in bottom of baking dish. Fill cooked shells with tofu & cheese mixture. Arrange filled shells in the baking dish. Pour remaining sauce over shells. Top with remaining mozzarella and parmesan.
- Cover with foil and bake about 35 minutes; uncover and cook until cheese is melted, about 5 minutes
