Soy Good Custard

  • 1 cup soft silken tofu
    This custard brings together tofu, soy milk, eggs, honey, vanilla, and if you so choose nutmeg and fruit for a tasty, high protein dessert. Dessert has never been so healthy!
    Soy Good Custard
  • 1 cup vanilla soy milk
  • 2 eggs, slightly beaten
  • 1/4 cup honey
  • 1 teaspoon vanilla
  • Nutmeg, optional
  • Fruit, optional

 

Preheat oven to 350 degrees.  Then put tofu in blender and whirl to make is smooth.  After that, add soy milk, eggs, honey and vanilla and continue blending until smooth.  Pour into four buttered 10 ounce custard cups.  Sprinkle with nutmeg as desired.  Then set cups in flat pan containing 1 inch water.  Bake 20 to 30 minutes or until knife inserted near edge of custard comes out clean.  Chill in refrigerator until ready to serve. This will serve 4.
