Thai Peanut & Soy Snacking Sauce

1 pound firm tofu, drained and crumbled
1/2 cup creamy peanut butter
1/3 cup original soy beverage
3 tablespoons dark brown sugar
2 tablespoons soy sauce
1/2 teaspoon cayenne powder
½ cup toasted unsweetened coconut

Combine in food processor tofu, peanut butter, soy beverage, brown sugar, soy sauce and cayenne; mix together until smooth. Stir in coconut.

Serve with vegetables and crackers.

Makes 3 cups. Serving size: 2 tablespoons.
