Silky Soy Crème Brulee

Ingredients:

  • 2 cups soy milk
  • 4 Tbsp. cornstarch
  • 2/3 cup granulated cane sugar
  • 4 tsp. vanilla bean paste
  • 1 tsp additional granulated cane sugar for topping

Directions:

  1. Mix all ingredients together in a blender until well mixed
  2. Pour into a cold saucepan and heat on medium heat until thickened, stirring frequently (about 5 minutes)
  3. Spoon into ramekins and smooth out tops. Cool down and then refrigerate for at least 1 hour
  4. Before serving, sprinkle each dessert with 1/4 tsp. cane sugar and caramelize using culinary torch, candle, grill lighter or oven broiler
  5. Return to refrigerator for up to 30 minutes to allow topping to firm up
