Silky Soy Crème Brulee
Ingredients:
- 2 cups soy milk
- 4 Tbsp. cornstarch
- 2/3 cup granulated cane sugar
- 4 tsp. vanilla bean paste
- 1 tsp additional granulated cane sugar for topping
Directions:
- Mix all ingredients together in a blender until well mixed
- Pour into a cold saucepan and heat on medium heat until thickened, stirring frequently (about 5 minutes)
- Spoon into ramekins and smooth out tops. Cool down and then refrigerate for at least 1 hour
- Before serving, sprinkle each dessert with 1/4 tsp. cane sugar and caramelize using culinary torch, candle, grill lighter or oven broiler
- Return to refrigerator for up to 30 minutes to allow topping to firm up
